Easy Refrigerated Fruit Tart

This is another of Stephan's Mom's recipes. It's easy to make and always popular. The original recipe calls for guavas, but as that is so difficult to find in the UK, we use the mixture suggested below. Just about any tinned fruit will do though.

Ingredients

  • 1 Swiss roll (either vanilla or chocolate)
  • 1 Tin (400g) Black Cherries
  • 1 Tin (200g) Summer Berries
  • 1 Tin (200g) Black Berries
  • 60 ml Water
  • 1 Tin (397g) Condensed Milk
  • 250g Cream Cheese
  • 125ml Lemon Juice
  • 250 ml Cream
  • 5ml Vanilla Essence
  • 2 Teaspoons Castor Sugar
  • 3 Tablespoons Custard powder

Method

  1. Cut Swiss roll into thin slices and cover the bottom of a 30cm tart dish with it.
  2. Drain the juice off one of the smaller tins of fruit. (Otherwise the mixture is too runny.)
  3. Mix the cherries, summer berries and black berries.
  4. Boil the fruit mixture together for 3 minutes.
  5. Mix the Custard Powder with water, add to the fruit mixture & boil for another minute.
  6. Spread the fruit mixture over the Swiss roll slices and let it cool.
  7. Whip the condensed milk, cream cheese and lemon juice together and spread over the fruit mixture.
  8. Whip cream with the castor sugar and vanilla essense and spread it on top of the condensed milk mixture.
  9. Refrigerate until needed.
