EGG NOG
I originally found this recipe here, http://256.com/gray/recipes/eggnog/ but have hopefully slightly improved on it!
Ingredients
- 4 Eggs
- 1/2 Cup Sugar
- 1/2 Cup Rum
- 1 1/2 Cups Whole Milk
- 1 1/2 Cups Whisky
(Or 3/4 Cup Brandy & 3/4 Cup Whisky)
- 1 Cup Double/Whipping Cream
- 1 Tablespoon Vanilla Essence
- Ground Nutmeg
Method
- Separate eggs into yolks and whites
- Beat egg-yolks and half of Sugar till thick and creamy
- Beat egg-whites and Vanilla Essence with other half of sugar till stiff
- Combine the yolks and whites together gently
- Whisk in rum slowly
- Whisk in milk slowly
- Whisk in whisky (or whisky and brandy) slowly
- Whisk in half of cream slowly
The idea is to do things gently and slowly to preserve the eggnog's fluffiness.
When ready to serve
- Whip rest (1/2) of cream, fold in carefully.
- Sprinkle nutmeg on individual servings.
