EGG NOG

I originally found this recipe here, http://256.com/gray/recipes/eggnog/ but have hopefully slightly improved on it!

Ingredients

Method

  1. Separate eggs into yolks and whites
  2. Beat egg-yolks and half of Sugar till thick and creamy
  3. Beat egg-whites and Vanilla Essence with other half of sugar till stiff
  4. Combine the yolks and whites together gently
  5. Whisk in rum slowly
  6. Whisk in milk slowly
  7. Whisk in whisky (or whisky and brandy) slowly
  8. Whisk in half of cream slowly

The idea is to do things gently and slowly to preserve the eggnog's fluffiness.

When ready to serve

  1. Whip rest (1/2) of cream, fold in carefully.
  2. Sprinkle nutmeg on individual servings.
