GINGER COOKIES
This is my Mom's recipe & she says the secret lies in doing all the mixing by hand, i.e. not to use spoons.
Griet & I love the cookies in equal measure!
Ingredients
- 1.5kg Self-raising flour
- 6 Cups sugar
- 4 Large Eggs whisked
- 500g Butter (or margarine)
- 500g Golden syrup
- 4 Tablespoons ginger powder
- 1 Teaspoon bicarbonate of soda
Method
- Cream softened butter and sugar by hand.
- Add eggs to mixture
- Add flour, ginger and bicarbonate of soda and mix well. (Mixture will look dry)
- Add syrup and mix well.
- Roll dough in to small balls (about 50p size) and place on oiled baketray. (Don't flatten, they go flat as they bake so leave plenty of room)
- Bake at 250°C (480°F) for about 8-10 minutes (Take care, they easily overcook!)
(Makes about 20 dozen cookies)
